Superfood Chocolate Crackles

All last week I was craving something sweet. It hasn’t helped I have been looking at Pure 2 Raw on a daily basis and drooling over their recipes- why does everything they make look so good?! I felt like I hardly had time to cook meals last week let alone bake, so I had to wait until the weekend to get in the kitchen properly.

Superfood Chocolate Crackles

This recipe is similar to Vegan Chocolate Spiders but I have added dried berries which make the recipe particularly sweet – without the need for sugar, agave nectar or stevia! And you know what else I did? I kept a note pad and paper near me when I was making the recipe, so there will be no more “approximate” measurements – gosh I’m getting professional.

What you need

50 grams of shredded coconut

2 heaped tablespoons of cacao

1 heaped tablespoon of flax meal

50 grams of dried berries – I used goji berry, blueberries, and cranberries

2 tablespoons of coconut oil

Optional – 2 teaspoons of peanut butter

Combine all dry ingredients in a bowl

Add in coconut oil

Cover a tray with grease proof paper and dollop mixture in small blobs – should make approximately 12

Leave to set in the fridge for one hour

F is allergic to nuts so I made half with peanut butter and a half without. Both taste good, however, the version without the peanut butter doesn’t stick together as well as it’s peanut butter counterpart. Don’t fear! Once frozen it will be exactly the same as the peanut butter version.

If you want to go all out, here is the dessert version – Trust me, you definitely want to go all out!

What you need

3 Tablespoons of Nushie’s Natural Ice Cream – Chocolate flavour

2 Teaspoons of organic peanut butter

Cacao Powder

Mash the ice cream and peanut butter together in a separate bowl

Make the mixture into a ball and place in a clean bowl

Add the chocolate crackle on top

Garnish with cacao powder

This is so good that I have had to limit myself to eating it once a week, otherwise, things could get a little out of hand!
