Trust me, you don’t want to miss this one. F loves this dish and he is REALLY fussy eater plus he isn’t vegan.This is my take on the orginal recipe found in Skinny Bitch in the Kitch; if you haven’t already go and get yourself a copy! You can view my other Skinny Bitch inspired recipe here.
What you need
4 garlic cloves, chopped finely
3 tablespoons of coconut oil
5 tablespoons of vegan butter
1 head of brocolli
1 bunch kale
Wholemeal spelt pasta
Pine nuts
Sea salt
Steps
Cook the garlic in the coconut oil for about 3 minutes on a low heat
Add in vegan butter, take off heat and set aside
Cook pasta following the instructions – bear in mind wholewheat and spelt pasta takes much longer to cook than regular pasta
When pasta is 2 minutes from being done, add vegetables to the boiling water
Once vegetables and pasta are cooked (veggies are meant to be crisps, not soggy!) drain pasta and veggies leaving a little bit of water
Add veggies, pasta and coconut butter sauce into the pot and let simmer for 3 minutes
Serve with pine nuts
So easy and filled with so many nutrients. Yum Yum!
