Throwing up and feeling like crap the next day are not high on my priority list but I do love an occasional cocktail! Regular cocktails use heaps of sugar and they often leave me feeling jittery then really tired after the sugar hit has worn off.
Well not anymore!
And for those of you which don’t drink (hello parents!) leave out the alcohol and add freshly squeezed apple juice instead.
2 cups ice cubes
3 large ripe kiwi fruit, peeled
100ml white rum
The finely grated rind and juice of 1 lime
300 ml water
3 tablespoons (50g) Natvia
Finely grated rind and juice of 1 lime
To make the lime syrup, combine water, Natvia, rind and juice in a small saucepan.
Bring to the boil and stir regularly.
Simmer uncovered for 5 minutes. Cool. Pour into a heatproof jug and chill well.
To make the cocktail, place the chilled syrup, ice cubes, kiwi fruit and extra lime rind and juice into a blender.
Cover and blitz until smooth and foamy.
Pour into chilled serving glasses and serve immediately.
Tips and Tricks
You can substitute the white rum and with apple juice for a delicious mocktail
The syrup can be refrigerated in a sealed container for up to 3 days in advance
You can vary the fruit used to create different flavoured cocktails, try a cup of diced ripe honeydew melon, pineapple, fresh peaches or nectarines.
