Why are you so passionate about vegetarian & vegan plant-based food?
I grew up in a vegetarian household and experienced first hand the effects of eating a healthy vegetarian diet. I was rarely sick and was for the most part, I was a happy and healthy child. When I was 21 I became vegan and started eating more plant based foods and cutting back on the amount of refined carbohydrates and sugars I consumed. I felt amazing after making this transition and now I want to show people that it isn’t difficult or boring to eat a plant based diet! Plant based foods don’t exclude anyone, so even if you are not vegan or vegetarian it’s definitely worth including more of them in your diet.
Who are your food heroes and heroines?
Jessica Ainscough, Sarah Wilson, Alicia Silverstone.
If you were stuck on a desert island and could only take 6 foods with you, what would they be?
That’s really hard decision. It would have to be coconut oil, raw cacao powder, chickpeas, beetroot, carrot & kale – and my juicer!
What do you hope readers will take from your blog and recipe creations?
I like to think of Live Healthy Simply as “inner city health”, I want to show people that it is possible to live a balanced and healthy lifestyle regardless of where you live. Most people don’t have the luxury to mediate for 2 hours during the day nor can they grow their own food but there are still things you can do to ensure your health is your top priority and that’s what Live Healthy Simply is all about.
What’s your life motto?
The world gives to the giver and takes from the taker.
Finally, what would be your top tips to anyone wanting to get started eating healthier but have no idea where to start?
Learn how to cook, when you are prepare food yourself you start to question where it comes from and its nutritional value. If you are constantly eating out or only warming up food you are disengaged from the process. Oh and buy a juicer and a blender – you won’t regret it!
