Recipe: “I Have No Ingredients” Soup

It’s moving a week and the fridge is looking very empty for a Monday. Faiz cleverly needed to go to Cairns for work, which means I get to be really creative in the kitchen this week. I refused to go grocery shopping on Saturday because I get a little rush out of finding new and interesting ways to put foods together, plus we did have a fair amount of food left…Well, we did on Saturday!

Today the food left is a little random, like jigsaw pieces from two different sets that are never going to fit together, unless you get your hands on a pair of scissors! For example, I wouldn’t normally put kale and leek together but I did today and with just the right amount of miso left it tasted pretty good!

But then again miso makes everything taste good.

Eat with toast and tahini

Recipe

1 bunch of kale

2 carrots

1 leek

1/4 green lentils

1 tablespoon miso

1 teaspoon Himalayan rock salt

1 teaspoon cinnamon

1 teaspoon mixed Italian herbs

Water

I used my Tefal Soup & Co to make the soup, hit P2 and 35 minutes later soup is ready. It really is that easy, stop being jealous and go out and buy one!

What recipe do you make when you’re running low on ingredients? What random veggies have you thrown together that’s actually a winning combination?

*In Faiz’s defensive he did do a lot of packing on Saturday, I just wish he hadn’t gone for 4 days…it’s too long!
