As long as the rice is already cooked (make it the night before and allow it to cool in the fridge overnight) you can throw this dish together in 5 minutes.
1 cup cooked brown rice
1 carrot thinly grated
1 zucchini thinly grated
1 chopped green pepper
1 steamed corn on the cob
and any other veggies you have lying around in need to be used.
1/4 cup olive oil
1 lemon or lime
Soya sauce or bragg
